Meatball Stroganoff

400 calories; $2.25 / serving

I love those already cooked meatballs you find in the frozen section, and I don’t care who knows it. But definitely feel free to sub them in this recipe for vegetarian or homemade meatballs. Make it your own!

  • 1 Package Egg Noodles, cooked
  • 1 Tbsp vegetable oil
  • 1 cup Mushrooms
  • 1/2 cup onion, diced
  • 1/2 tsp Paprika
  • 1/4 cup cooking wine
  • 2 Tbsp flour
  • 2 cups chicken broth
  • 2 Tbsp Lemon Juice
  • 2 Tbsp Dijon Mustard
  • 3/4 lb. frozen meatballs, defrosted
  • 1/4 cup fat free sour cream

Heat oil in large skillet and saute onions and mushrooms in the paprika until soft. Add wine to deglaze the skillet, and simmer until liquid is nearly evaporated. Sprinkle flour over vegetables and stir.

Whisk in broth, lemon juice, and mustard, and simmer 10 minutes. Add meatballs and sour cream, and cook until meatballs are heated through. Add Salt/ Pepper. Serve over cooked noodles.
