This is a fancy pants dinner if I ever saw one. Perfect for impressing, or just enjoying alone with a glass of wine to celebrate how fancy you are sometimes (or always).
- 4 boneless chicken thighs
- 2 TBSP olive oil
- 1 TBSP chopped rosemary
- 2 garlic cloves, minced
- 2 TBSP butter
- 1 large onion, thinly sliced
- 1 TBSP chopped thyme
- 1 TBSP red or white wine vinegar
- Pinch of sugar
- 6 flour tortillas
- 1/2 cup blue cheese, crumbled
Preheat the oven to 450 degrees. Toss the chicken thighs with HALF of the olive oil, the rosemary, garlic and a generous pinch of salt. In a large, deep skillet, melt the butter with the remaining olive oil. Add the sliced onions, thyme, vinegar, sugar and a generous pinch of pepper. Cook over moderately low heat, stirring occasionally, until the onions are softened.
Grill the chicken in a grill pan until fully cooked. Let cool, then chop or shred. Arrange 6 tortillas on 2 large baking sheets. Spread the onions, chicken, and cheese over the tortillas. Cover with the remaining tortillas, pressing to flatten. Bake until the quesadillas are golden and toasted.
