This is actually a Colombian dish known as “Bistek”. My Colombian husband approves of this recipe, so feel free to tell others that it’s “authentic” while they enjoy it and marvel at your cultured self.
- 1 Tbsp Mustard
- Salt, Pepper, and Ground Cumin, to taste
- 1 Tbsp Vinegar
- 2 Medium Tomatoes
- 4 Green Onions
- 1 Small Red Onion
- 2 Cloves Garlic
- 2 Tbsp Oil
- 4 Thin Steaks
- 4 Eggs White Rice for Serving
Combine first 8 ingredients in food processor until finely chopped. Pour vegetable blend into a large pot, and simmer until cooked (about 5 min). Add steaks to tomato sauce, covering the steaks completely. Simmer another 5 Min. Serve on top of rice, and top with fried eggs.
