Stuffed Acorn Squash

Fall foods are great, but PRETTY Fall foods are even greater!! There’s nothing more inviting than a colorful acorn squash stuffed with flavorful goodness. With such an impressive presentation, who knew it was so easy to make?!

Ingredients:

  • Acorn Squash
  • A Pound of Italian Sausage
  • A Celery Rib
  • A Carrot
  • Half an Onion
  • A Pack of Mushrooms
  • Parmesan Cheese

Preheat the oven to 425 degrees. Cut the squash in half from stem to tip, then scoop out the seeds. Cover the cut side with some oil and salt/pepper, then bake with the cut side down for 25 minutes. Meanwhile, throw all the other veggies in a food processor and finely chop them. Saute the sausage in a frying pan, adding the chopped veggies and some seasonings. Scoop the mixture into the baked squash and top with some parmesan cheese.
