Macaroni and Sweet Potato Tomato Sauce

Sweet potatoes are an amazing “superfood”, but most people don’t like the taste of them. That’s why we tend to cover this superfood in butter, sugar, cinnamon, maple syrup, and marshmallows. Try this healthy vegetarian dinner instead, which does a great job of masking the sweet potato flavor while keeping the sweet potato benefits. Tip: use chickpea or lentil pasta to add more protein; it’ll keep you full for longer!

Sweet Potato Tomato Sauce

Ingredients:

  • 1 large sweet potato, peeled and chunked
  • 1 jar favorite spaghetti sauce
  • 1 bag of favorite pasta
  • milk

Boil the sweet potato chunks until tender, then remove them from the water and toss them in a food processor to cool. Meanwhile, boil and drain the pasta. Add the spaghetti sauce to the cooled potatoes, then puree. Add milk as needed to thin the sauce. Serve on top of cooked pasta. Tip: top it all off with some parmesan cheese and Italian seasoning.
